Citrus chicken with orange, lemon and pink grapefruit

Pietro Salonna

The success of this dish depends largely on how you balance the citrus. Orange provides the sweet base and body of the sauce; lemon brings the freshness that keeps it from becoming cloying; pink grapefruit adds the bitter, floral note that turns a good recipe into a memorable one. The classic ratio is two parts orange juice to one part lemon and one part grapefruit, but adjust it to your taste — if you like bolder flavours, add more grapefruit; if you prefer a softer profile, increase the orange.

For the meat, skin-on thighs are the best choice: they stay juicy through the long simmer in the sauce, and after the initial browning the skin becomes that golden, glossy edge that makes all the difference. If you can, choose a free-range chicken: its firmer meat holds up better to longer cooking. A structured white wine pairs well — a Verdicchio dei Castelli di Jesi Riserva or an Alsace Gewürztraminer — embracing the citrus notes without being overpowered by them. As a side, classic mashed potatoes or a thyme rice pilaf make the perfect canvas for mopping up the sauce.

Pollo agli agrumi

Citrus chicken is one of those recipes that turns an everyday ingredient into something surprising. The secret lies in bringing together three different citrus fruits — orange, lemon and pink grapefruit — which melt during cooking into an amber sauce where sweetness, acidity and a hint of bitterness strike a perfect balance.

It fills the kitchen with its aroma from the very first minutes of cooking, and it works just as well for a relaxed dinner as it does when you want to make something special without overcomplicating things.

Ingredients

  • 4 chicken pieces (thighs and drumsticks, about 1 kg in total)
  • 2 juicy oranges
  • 1 pink grapefruit
  • 1 lemon
  • 3 garlic cloves
  • 200 ml hot chicken stock
  • 1 tbsp acacia honey
  • 2 sprigs fresh rosemary
  • 3 tbsp extra virgin olive oil
  • Salt, to taste
  • Freshly ground black pepper, to taste

Method

  1. 1

    Prepare the citrus

Squeeze the orange, grapefruit and lemon juice into a bowl. Use a vegetable peeler to take a few strips of orange and lemon zest, taking care to avoid the bitter white pith. Set everything aside.

  2. 2

    Marinate the chicken

Place the chicken pieces in a large bowl, pour over half the citrus juice and add crushed garlic, a drizzle of oil, salt and pepper. Mix well, cover with cling film and leave in the fridge for at least 30 minutes.

  3. 3

    Brown the chicken

Heat a drizzle of extra virgin olive oil in a large frying pan over a high heat. Remove the chicken from the marinade, pat it lightly dry with kitchen paper and brown it on all sides until evenly golden, about 8-10 minutes in total. Lift out the pieces and set aside.

  4. 4

    Build the flavour base

In the same pan, lower the heat and add the garlic and citrus zest. Let them infuse for 1-2 minutes, stirring, until the pan starts to smell fragrant. Don't let the garlic burn.

  5. 5

    Deglaze with the citrus

Pour the remaining citrus juice into the hot pan, scraping the bottom well with a wooden spoon to release the browned bits. Let the juice reduce for 2-3 minutes over a medium heat.

  6. 6

    Braise

Return the chicken pieces to the pan and add the hot stock, honey and rosemary. Cover with a lid and cook over a low heat for about 25-30 minutes, turning the chicken halfway through, until the meat is cooked through and tender.

  7. 7

    Reduce the sauce

Remove the lid, turn up the heat slightly and let the cooking juices reduce for 5-7 minutes, until you have a slightly thick, glossy sauce that coats the back of a spoon.

  8. 8

    Serve

Arrange the chicken pieces on plates, spoon over plenty of citrus sauce and garnish with a few thin slices of orange and some fresh rosemary leaves. Serve immediately.
