Bruschetta with ricotta, orange zest and honey

Pietro Salonna

The secret is in the quality of the ricotta: look for fresh sheep's milk ricotta, the kind you find at a farm or a local dairy, with that grainy texture and bold flavour. Supermarket cow's milk ricotta works but gives a flatter result — if it's your only option, add a pinch of salt and a grind of pepper to liven it up. The zest should be grated at the last moment, never touching the bitter white pith, and used straight away: the essential oils in citrus peel fade quickly.

For the honey, choose a delicate wildflower honey or an orange blossom honey, which amplifies the citrus note without masking it; avoid very aromatic honeys such as chestnut, which steal the show. Don't skimp on the bread: a good sourdough loaf with a thick crust, toasted until it crackles under your fingers, is the foundation that makes all the difference. For an extra touch, add a small leaf of fresh thyme or a few pink peppercorns before serving.

Bruschette con ricotta, scorza d'arancia e miele

Bruschetta with ricotta, orange zest and honey is one of those starters that seem improvised but stay with you. Three ingredients, one precise balance: the fresh, milky taste of ricotta, the lively fragrance of freshly grated orange zest and the rounded sweetness of honey that ties everything together.

It's the perfect recipe for an aperitivo that keeps things simple without settling for less: a few minutes of preparation, no cooking and a result that wins everyone over every time.

Ingredients

  • 8 slices of rustic country bread
  • 250 g sheep's milk ricotta
  • 1 unwaxed orange (zest)
  • 3 tbsp acacia honey
  • 1 pinch of salt

Method

  1. 1

    Prepare the bread

Cut the bread into slices about 1.5 cm thick, so they hold the topping well without breaking.

  2. 2

    Toast

Heat a frying pan over a medium-high heat or switch on the oven grill. Toast the slices for 2-3 minutes per side until golden and crisp.

  3. 3

    Prepare the ricotta

In a bowl, work the ricotta with a spoon until smooth and creamy. Season with a pinch of salt.

  4. 4

    Grate the zest

Wash and dry the orange carefully. Grate the zest with a Microplane, taking only the orange part and avoiding the bitter white pith underneath.

  5. 5

    Assemble

Spread a generous layer of ricotta on each slice of toast while still warm, covering the whole surface right to the edges.

  6. 6

    Add the zest

Scatter the grated orange zest evenly over the ricotta, so every bite has its citrus touch.

  7. 7

    Finish with honey

Drizzle each bruschetta with a thread of acacia honey, making a slow swirl with the spoon for an even sweetness.

  8. 8

    Serve

Bring the bruschetta to the table straight away, while the bread is crisp and the ricotta fresh. Serve as a starter or afternoon snack.
